I had the pleasure to interview Carolyn and to learn more about her keto why and her success with the low carb keto diet.

Welcome Carolyn, we would love to know a little bit more about you...
I am originally from Toronto, Canada but I’ve lived in a number of places in the US, including southwestern Colorado, Phoenix, AZ, and Boston, MA. I now live in Portland, OR with my husband and three kids and we love it here. I have a Master’s degree in Human Evolution and an extensive background in higher education administration and now...now I am a full-time food blogger! Funny where life takes you.
What was your inspiration to start eating a low carb keto diet?
Diabetes! I had gestational diabetes with my third child and after she was born, it didn’t really resolve. I kept seeing an upward climb on my glucometer, despite eating what would be considered a healthy diet, and I knew I had to take charge. I did a lot of research and felt that going low carb would be the best way to stay off insulin.
Since the reason you started the low carb KETO lifestyle for health reasons how has it changed your overall health?
It’s nothing you would really notice from the outside but diabetes can take such a toll on your body and cause nerve damage and blindness. All of that can go unnoticed for a long time if blood glucose levels are left unchecked. I don’t have any issues thus far, thank goodness. And I won’t ever have them if I can help it!
I will say, though, that I seem to put on muscle very easily now that I eat a ketogenic diet. I guess that part is something of a noticeable change.
How has it changed you and your perspective on life?
Well, having diabetes, going low carb and starting a low carb food blog have all been life-changing. I love what I do and I love what I eat, and I want other people to see how amazing this lifestyle can be. I see how many people’s health is put at risk by the standard nutritional advice and it makes me crazy! There’s a simple solution here, and it’s all about what you put in your mouth on a daily basis.
What is your favorite low carb keto food or recipe?
Um...my whole blog? No really...what my favourite recipe or food it changes day to day, based on my whims and whatever delectable thing I’ve recently cooked up. I am crushing hard right now on all things pumpkin and pumpkin spice. Oh, and I recently made a Pecan Pie Cheesecake for the Instant Pot. It was divine!
Do you have some advice for someone just starting out?
It seems hard, sometimes insurmountable, at first. But it gets so much easier and you will be forever grateful that you did it. But you don’t have to do it alone. Join support groups, find some recipes that excite you, and dive in. There is no time like the present to take charge of your health.
